Coriander Carrot Chips

  • 2 large carrots or 3 medium carrots
  • 1/2 tsp. Olive oil
  • 1/4 tsp. Sea salt
  • Black pepper to taste
  • 1/4 tsp. Ground coriander

  • 2 large carrots or 3 medium carrots

  • 1/4 tsp. Sea salt
  • Black pepper to taste
  • 1/4 tsp. Ground coriander
Instructions
  1. Method:
  2. Preheat oven to 350°F.
  3. Wash and peel the carrots. Using a
  4. mandolin, thinly slice the carrot on the bias
  5. making ovals. Toss the carrots with salt,
  6. pepper and coriander.
  7. Place the carrots in a single layer on a sheet
  8. pan lined with a Silpat.
  9. Bake for 18 minutes looking for the carrots
  10. to appear crisp without letting them burn.
Recipe Notes

*For a semi-homemade version, purchase vegetable chips and spread in a crowded, single layer onto a sheet pan. Mist with cooking spray and dust with spices. Place in a cold oven and allow chips to warm until the temperature reaches 325 or until lightly browned. Immediately remove from sheet pan.
